    It is with heartfelt sorrow that the community of High Falls, the D&H Canal Historical Society, and countless admirers across the culinary world mourn the passing of Chef John Novi, a renowned restaurateur, creative visionary, and beloved local legend. John passed away recently, leaving behind a profound legacy rooted in passion, innovation, and community service.

    What Happened

    Chef John Novi, best known as the Chef and Proprietor of the legendary DePuy Canal House in High Falls, passed away, leaving a lasting impact on both the culinary world and his local community. Born in Brooklyn, John made High Falls his home for many years, where he became a trailblazer in the American fine dining movement.

    In 1970, just six months after opening the DePuy Canal House, John received a rare and coveted 4-star review from New York Times critic Craig Claiborne—one of only eight such awards he ever gave, and the only one outside the New York metropolitan area. This recognition not only put the restaurant on the map but also brought High Falls into the national spotlight, making John a pioneer in the world of fine dining.

His impact extended far beyond the kitchen, as he used his talents to work with local organizations such as Spiritual Journeys, Montefiore St. Luke’s Cornwall, and Mohonk Mountain House, always bringing people together through his work.
